Fish sauce with herbs


  1. Get all the ingredients ready
  2. Bring the fish broth, crème fraiche and star anise to the boil in a pan and cook until the mixture has reduced by half. Push the mixture through a very fine sieve.
  3. Stir the butter into the hot sauce and season to taste with salt and pepper.
  4. Chop the herbs finely.
  5. Whisk the sauce using a hand blender and add the herbs to the sauce.

Delicious with: jumbo prawns, various fish dishes


  • 1 jar of fish broth 350 ml
  • 100 gram crème fraîche
  • 2 star anise
  • 50 gram butter
  • Sprigs of garden herbs (chives, tarragon, dill)
  • Salt and pepper
