Fish sauce with herbs
- Get all the ingredients ready
- Bring the fish broth, crème fraiche and star anise to the boil in a pan and cook until the mixture has reduced by half. Push the mixture through a very fine sieve.
- Stir the butter into the hot sauce and season to taste with salt and pepper.
- Chop the herbs finely.
- Whisk the sauce using a hand blender and add the herbs to the sauce.
