Apple syrup sauce


  1. Get all the ingredients ready
  2. Bring the game broth, red wine, apple syrup, mustard, black peppercorns and juniper berries to the boil in a pan. Boil until the mixture has reduced by half.
  3. Sieve the sauce.
  4. Stir the butter into the hot sauce and season to taste with salt and pepper.

Delicious with: game or red meat.


  • 1 jar of game broth 350 ml
  • 250 ml red wine
  • 50 gram apple syrup
  • 20 gram mustard
  • 10 black peppercorns (crushed)
  • 5 juniper berries (cut open)
  • 15 gram butter
